Arnaud Duhem: The modernized heir to bistronomy

PODCAST “From farm to fork” - Arnaud, owner of Les Petits Parisiens bistro, is the guest of Christian Regouby (Collège Culinaire de France).

In this episode of the Collège Culinaire de France podcast, Arnaud Duhem discusses his career, his choices, and his vision of the restaurant industry. He explains that after years spent in luxury hotels and prestigious establishments, he chose to return to his roots by taking over the historic birthplace of “bistronomy”—the legendary Régalade—to make his mark under the name Les Petits Parisiens.

His ambition is to combine excellence and of hospitality, local heritage and modernity, local roots and international openness. He wants a bistro to be more than just a place to eat—a space for living, sharing, and meaning.

On the management side, Arnaud describes his role as a “guardian of the temple”: defining the framework, setting ambitions, ensuring the coherence of the project, while the chef (Lucas Felzine) and sommelier (Loïc Mougène) express their creativity.

Finally, he emphasizes the concept of transmission: welcoming, training, bringing to life a place steeped in history, while allowing it to evolve. For him, “living bistronomy” is measured as much in the dishes as in the people:
