Hare à la royale, a classic dish in French cuisine, will be added to the menu at Les Petits Parisiens on December 1:
A legendary dish created in the 19th century, it was codified by Antonin Carême and then perfected by Auguste Escoffier and Senator Couteaux. It embodies the pinnacle of cuisine that requires patience, precision, and absolute respect for the product. Long reserved for connoisseurs, lièvre à la royale belongs to a family of rare, demanding, almost ritualistic dishes that embody a certain French art de vivre.
