At the origin of this dynamic is Arnaud Duhem, a restaurant enthusiast who cut his teeth in Parisian palaces. He embodies the establishment's vision, energy, and sense of hospitality. Attentive to detail and the comfort of guests, he ensures that everyone feels welcome, cared for, and free to enjoy the moment. His role is to keep the heart of the restaurant beating and to create the conditions for a fair, warm, and lively experience.
In the kitchen, Lucas Felzine creates contemporary French cuisine, guided by the seasons, the ingredients, and the search for balance. His cuisine is lively and precise, nourished by respect for producers, short supply chains, and the alchemy between textures and flavors. At the table, Loïc Mougène has created a wine cellar that resonates with this cuisine.
