Trained in renowned establishments such as those of William Ledeuil (Ze Kitchen Galerie), Alain Passard (L’Arpège), Anne-Sophie Pic (La Dame de Pic), Philippe Labbé (Le Shangri-La Paris) and Uma, Lucas Felzine has also actively participated in the development of Nikkei cuisine in France.
